Adrien Brunet, our new Chef

Since November 2018, Adrien Brunet has replaced Jean-Luc Rocha as the Executive Chef of the Saint James Paris. He had been working closely with him since 2012, first in Cordeillan-Bages (2 stars Michelin) and then as a deputy in the Paris institution. Alongside his mentor, he learned that “nothing is impossible”, discovered the delicate association of flavours and textures, perfected his cuts and trained his technique. He understood that to blend the flavours, an organic, almost chemical knowledge of the products is fundamental.

Originally from the Berry region, Adrien has grown in an epicurean family, where tables lacked nothing. His childhood memories? Family meals for which his grandmother cooked the breast fillets and confits of the ducks they farmed. At the Brunets’, no cans or ready meals! Since childhood, Adrien has been used to good, beautiful and natural products.
“The essence of a receipe is not to transform the product but to accompany it and to sublime it in its original flavour.”

His compositions are tasted and analyzed with the Head sommelier to create the perfect pairings.
